Cakes

~MOM’S RHUBARB CAKE~

2-1/2 cup all-purpose flour
1/2 cup white sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
1 cup low-fat buttermilk or sour milk ( add 1 tablespoon lemon juice to milk)
1 teaspoon vanilla
4 cups chopped rhubarb

Whisk flour, sugar, baking soda, salt together. Add oil, milk, and vanilla to dry ingredients; mix well. Stir in rhubarb. Coat 9×13 inch pan with cooking spray. Pour batter in prepared pan. Bake in 350 degree oven for 50 to 60 minutes or until wooden pick inserted in center comes out clean.
