~FRUIT PIZZA~

1 tube(16-1/2oz) refrigerated sugar cookie dough
1 cup sugar, divided
2 tbs. cornstarch
1/2 cup orange juice *NOTE AT BOTTOM*
1/4 cup lemon juice
1 pkg(8 oz) cream cheese, softened
1 tbs milk
1 tsp. grated orange peel
2/3 cup heavy whipping cream
1 1/2 cups halved strawberries
1 medium peach
1 small banana
1 small apple, sliced thinly
1/2 cup fresh blueberries

Let dough stand at room temp for 5-10 minutes to soften. Press onto an ungreased 14-in pizza pan. Bake at 350F for 13-16 minutes or until golden brown. Cool on wire rack.
In small saucepan, combine 1/2 cup sugar, cornstarch and juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside to cool.
In a large mixing bowl, beat cream cheese, milk, orange peel and remaining sugar until well blended. In a small bowl, beat cream until soft peaks form; fold into cream cheese mixture. Spread over crust. Arrange fruit over filling; spread with reserved glaze. Refrigerate until chilled.

*NOTE*: I used canned pineapple and mandarin oranges for some of my fruit. Keep the juice and use that as part of your orange/lemon juice mixture.

YIELD: 12 servings

~LEMONADE CHEESECAKE~

1 pkg(8oz) cream cheese, softened
1 tsp. CRYSTAL LIGHT Lemonade Flavor Drink mix
1/4 cup milk
1 tub(8oz) Cool Whip Topping, thawed
1(6oz) ready-to-use graham cracker crumb crust

Beat cream cheese and drink mix in large bowl with mixer until well blended. Gradually add milk, mixing until well blended. Stir in Cool Whip.
Spoon into crust. Chill 4 hours or until firm.

*NOTE: This recipe was originally made with fat free products. Feel free to substitue those instead.
